The ChromaQuest project has been running 3 months and we already have the first results! The work conducted during the first months of the project have been presented in the yearly 83rd International Scientific Conference of the University of Latvia in the conference section "Applied research in environmental science". Project expert, BSc Taisija Gricenko presented how the drying temperature and used drying techniques influence the contents of total anthocyanins, total polyphenolics and the corresponding antioxidative activities (DPPH) in a variety of berry press residues. The berry press residues have been obtained from an associated partner, the company "Very Berry", which are the leading producers of natural, high-quality berry juices in Latvia. These results are important in understanding the dynamics of anthocyanin (and polyphenolic) degradation due to exposure to temperature or oxygen. The work will continue to identify specific anthocyanin molecules that are degraded during the post-processing of berry press residues.
